Debbies Alaska Sockeye Delight

Alaska Salmon Recipes are made from home canned sockeye salmon that is a low fat and sodium meal and high in Omega-3, From the How to do it the Alaskan Way series of articles.

Simple Salmon - Origional Recipe: Sunset Favorite Recipes I

1 egg
¾ cup milk
1 cup soft bread crumbs
1 quart jar of canned Kenai River Sockeye Salmon (about 1 lb)
1 cup shredded cheddar cheese
1 teaspoon grated green pepper
1 tablespoon lemon juice
½ teaspoon celery salt
½ teaspoon garlic salt
½ cup fine dry bread crumbs mixed with 2 tablespoons melted butter

Beat egg and milk together; add soft breadcrumbs. Flake salmon and combine with bread milk mixture and cheese, pepper, lemon juice, celery salt and garlic salt.
Place in a 9-inch square baking pan and top with buttered crumbs. Bake in a 350° pre-heated oven for about 30 minutes. Serves 4-5.
(We always double the recipe so that we can make sandwiches with the next day out of the leftovers.)
